What's for dinner?

When Jeff & I first got married I only knew how to cook two things- spaghetti and chicken casserole. My best friend Anna gave me the recipe for her good ol' southern chicken casserole and it's been our favorite ever since. I have 4 variations of the recipe that I do. Tonight for Jeff's birthday eve dinner and b/c we've been eating so healthy lately (we deserve a southe
rn break) we had my version of the casserole with southern biscuits on top. Yummmm! :)

Here's what you need: (I forgot shredded cheese in the picture)

What you're going to do:

Step 1-Boil your chicken for about 10-15 minutes. I generally use 3-4 pieces of chicken for my hubby & I. We always have leftovers. They make wonderful next-day-lunch.


Step 2- While the chicken is boiling, mix these these items: cream of celery soup, cream of chicken soup, rotel, and canned veggie (I use corn or peas).

Step 3- Once the chicken is finished boiling, cut into small cubes and mix with above ingredients. Sprinkle a little cheese on top and this is what it should look like.



To make biscuits for top of casserole: (optional)

This is what you'll need:

2 cups sifted all-purpose flour

1 teaspoon salt

1 tablespoon sugar

4 teaspoons baking powder

1/3 cup shortening)

1 1/4 cups milk


Step 1- Mix all dry ingredients together. Slowly cut in shortening making sure to mix evenly and allow it to mix with the dry items.
Step 2-Stir in milk evenly.
Step 3- Dump the mix onto a well floured countertop. (As you can see in the picture, I did not flour very well.) The dough will be very sticky at this point, but the extra flour on the counter and your hands will make it less sticky.
Step 4- Roll out dough
Step 5- Cut out circles or any other funky shape you would like. I don't care about it looking good so I just use a knife.
Step 6- Place biscuits on top of the casserole.
Step 7- Bake at 375 until biscuits are brown and cheese is melted. The mix will start to bubble a little.

I usually serve with mexican rice on the side and a small salad. One of my other versions is what Anna taught me to do and that's use tortillas instead of biscuits. It's so yummy either way! If you make it, let me know how it turns out.

Love it soo good i have made the tortilla version but i always did it from what i remembered you told me glad to have written down somewhere now so i dont have to try to figure out what i put in it last time you know
